I have more dessert recipes made with olive oil for christmas time, last post I lost two out of five recipes, and I have thought that it will be better to write posts of three recipes each one ( better for me and better for you too).
In the same way I did in the previous post, I want to thank to ADSUR (Rural Development Association of Sierra Sur in Jaen) for let me using this documentation.
I want to remark too, that original recipes written in this christmas serial, were from women involved into the rural development in little villages in Jaen, their way of helping, in this case, is giving us their knowledge, knowings that their family give them in the last step of a very high way.
That’s why I need to thank to ADSUR and I need to Thank to these brave women too. I am writing their names at the end of each recipe. THANKS A LOT !!!

HUESOS DE MUERTO (DEAD MAN BONES)
We need a half a glass of olive juice, six eggs, five spoons of sugar, a little spoon of milled cinnamon, a little spoon of anise, five hundred grames of honey and, finally, flour ( no determinated quantity) .
First, we toast the anise with olive juice in a pan, only for a moment, one o two minutes. Filter the olive juice and reserve it when it will get cold.
Beat the eggs hardly until they double their volume, then put them in other recipient, where we will add the toasted (and now cold) olive juice, sugar , and enough flour until you can work with the paste without problem. Let the result alone 10 minutes ( it need to rest after such hard work).
Now, you will work with this paste, with your favorite rolling pin in order to obtain pieces of 15×10 cm (6×4 inches). Form a roll as shown in the image. Pass them through the honey ( honey diluted with water) and put some sugar over them.

LECHE FRITA (FRIED MILK)
Dilute the starch in a glass of water, in another recipient, beat the egg yolks with ten spoons of sugar, add the starch and only when sugar is well mixed, filter the whole stuff and add it to the milk.
Put all together into a big saucepan and cook it at a normal temperature, removing until cream become curd. Now you get our raw material.
Take a big and flat recipient with breadcrumbs at the bottom, and put the mix over it.
Beat two eggs.
Cut little squares as shown before at the picture, and pass them through breadcrumbs firstly and beaten eggs after. Fry them in olive juice. YOU GET IT.You can put over Fried Milk, honey, sugar, cinnamon or any other stuff.
Put water with olive juice into a saucepan, when it starts to boil, we will put suddendly the flour, and a little salt. Move it constantly, when dough is formed, add an egg, mix together, and only when the egg is incorporated, add the second one. Repeat this operation for all eggs.
You have the paste. Build big donuts (diameter 20 cm-8 in) and bake them a medium temperature into the oven.
When Regobeos are ready, put glass over them. You can open them as a sandwich and put into chocolate, your favorite marmelade, or what your imagination gives you.
